PANCAKE DAY!

A Classic of  American cuisine, pancakes are stacked tall, fluffy and best served with a drizzle of maple syrup. This easy recipe ticks all those boxes and takes around 15 minutes to prepare and eat. It is  perfect for Pancake Day,  a weekend brunch treat or in my case, MONDAYS!

This recipe that I’m going to give you is one of those infallible and seductive ones that I always make on Mondays. YES, ON MONDAYS!

As a chef, a entrepreneur and a mother, my weekends are always very busy with work, full of orders and the shop to be refilled, replacing all products. So Monday, is my most peaceful day, when I can have breakfast peacefully.

I prepare my pancakes early. The smell brings my whole family to the kitchen. That is when we get together and organize the week. I LOVE MONDAYS! IT’S PANCAKE DAY IN MY HOME!

Ingredients

  • 1 cups (150 g) all-purpose flour

  • ¼ cup (50 g) granulated sugar

  • 1 tsp (5 g) baking powder

  • ½ tsp (2.5 g) baking soda

  • 1 pinch salt

  • 1 1/2 cups (375mL) milk

  • 1/8 cup (30 mL) vegetable oil

  • 2 large eggs

  • 1/2 lemon juice

  • Butter, for greasing the pan

  • Maple syrup, for serving

  • Strawberries, bananas, blueberries

Directions

  • In a mixing bowl, add your milk and lemon juice – to make a buttermilk. Let is rest for 5 minutes while preparing the rest of the ingredientes;
    sift the flour, baking powder, baking soda and salt;
    In a separate bowl, whisk the  eggs, sugar and oil. Add this to the dry mixture and whisk just until blended;
  • Preheat a griddle over medium-high heat and lightly grease the pan. Drop ladles of batter onto the pan. Sprinkle small pieces of fruits ( if you want ) on top of each pancake, letting them sink gently into the batter without pressing;
     Cook the pancakes for 2-3 minutes, until bubbles begin to appear and the pancakes looks matte at the edges. Flip the pancakes and cook another 2-3 minutes before removing to a place.
  • Serve the pancakes immediately, with maple syrup and fruits on the side.

Notes

  • You can add small pieces of fruits, pieces of chocolate or whatever your imagination tell you.
